Buffalo Chicken Kabobs

Ingredients

  • 1 lb boneless skinless chicken breasts cut into 1'' pieces

  • 1 red onion cut into 1'' pieces

  • 1 yellow pepper cut into 1'' pieces

  • 1 red pepper cut into 1'' pieces

Buffalo Sauce

  • 1/2 c. red hot sauce

  • 2 Tbsp butter

  • 2 garlic cloves minced

  • 1 tsp smoked paprika

  • 1/2 tsp pepper

Instructions

Soak wooden skewers for at least 30 minutes if you are using them.

In a bowl mix together the ingredients for the buffalo sauce.

Thread a piece of chicken on skewer, then a piece of yellow pepper, red pepper and purple onion. Repeat until skewer is full.

Place skewers on grill that has been preheat to 350 degrees. Baste with buffalo sauce. Cover and grill 7-8 minutes. Open cover of grill and rotate skewers. Baste with buffalo sauce. Grill an additional 7-8 minutes or until internal temperature is 165 degrees F and juices run clear.
