Tomato Garlic Bruschetta


  • 8 medium tomatoes, seeded and cut into small pieces
  • 2-3 cloves garlic, chopped
  • 2 Tbsp fresh basil leaves, chopped
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • dash of ground pepper

For the Garlic Bread

  • loaf of bruschetta bread (on special this week)
  • 6-8 Tbsp butter, softened
  • 2-3 cloves of garlic
  • 1 Tbsp fresh basil, chopped
  • 1/2 cup+ mozzarella cheese, shredded


Toss together the cut-up tomatoes, chopped garlic and basil, olive oil, salt and pepper. Mix well. Combine the softened butter, garlic and basil. Spread on sliced bread. Under the broiler, toast the bread until golden brown. Remove the toast from the oven, top with mozzarella and then place it under the broiler again until the cheese is bubbly and toasted. Remove from the oven and allow to cool slightly. Top with bruschetta.
